‘What a Jerk’ are a range of highly spiced chilli-based marinades inspired by the Caribbean ‘Jerk’

I’ve been making and using my take on this classic for many years: for myself, my friends and for hundreds of happy customers in my work as a chef in Brighton & Hove.

Now I’m bringing it to you! Simple to use and available in a range of heats and flavour notes

Ingredients (Allergens in BOLD)

1. Classic ‘What a Jerk’ (Green Label)

Onions, Ginger Root, Soy Sauce (water, SOYBEANS, Wheat GLUTEN, Salt), White Wine Vinegar, Brown Sugar, Chillies, Garlic, Lime Juice, Water, Thyme, Black Pepper, Nutmeg, Allspice (Pimento)

2. ‘DO Fear the Reaper’ (Pink Label)

Onions, Ginger Root, Soy Sauce (water, SOYBEANS, Wheat GLUTEN, Salt), White Wine Vinegar, Brown Sugar, Chillies, Garlic, Lime Juice, Water, Thyme, Black Pepper, Nutmeg, Allspice (Pimento), Coriander, Paprika, Chadon Beni, Cayenne Pepper, Hickory Smoke (water, natural hickory smoke flavour, vinegar, molasses, colour: caramel, salt)

3. ‘New Jerk City’ (Orange Label)

Onions, Ginger Root, Soy Sauce (water, SOYBEANS, Wheat GLUTEN, Salt), White Wine Vinegar, Brown Sugar, Guava Jam (Refined Sugar, Water, Guava Concentrate, Gelling Agent: Pectin, Vegetable Fat [SoyBean Oil, Palm Oil in varying proportions], Acid: Citric Acid), Pineapple, Chadon Beni, Chillies, Garlic, Lime Juice, Water, Orange Juice, Thyme, Black Pepper, Nutmeg, Allspice (Pimento), Cinnamon, Coriander

These products are prepared in a professional manner, and kept apart from any of the 14 allergens required to state by U.K. food law, except when listed in BOLD.

Whilst every effort is made to prevent Nut, Groundnut, and Seed contamination, we cannot guarantee that trace contamination does not occur – even with the sterilisation of jars, utensils, etc., and the pasteurisation process we use for all our products.

Chillies

All of our chillies are absolute beauties…but they are also HOT HOT HOT!

No-one wants a chilli-belly, and I’ve designed all these marinades to not be “hot for the sake of it” – flavour comes first…but, be careful when you choose your ‘What a Jerk’.
